Zucchini Bake

INGREDIENTS

  • 4 eggs
  • 2 cups shredded zucchini
  • 1⁄2 cup oil
  • 1 cup Bisquick
  • 1 small onion, chopped or grated
  • 8 ounces grated cheddar cheese or parmesan cheese
  • 1⁄2 teaspoon salt
  • 1⁄2 teaspoon pepper
  • 1 teaspoon oregano (optional)

Tip: Squeeze the water out of the zucchini before adding to the mixture

INSTRUCTIONS

  1. Preheat your oven to 350 degrees F.
  2. Grease a 13 x 9 inch baking pan, or a 9 inch round baking dish with butter. Set aside.
  3. In a mixing bowl whisk the eggs until they are smooth.
  4. Add the vegetable oil, Bisquick and parmesan cheese. Mix well.
  5. In a separate bowl combine the sliced zucchini, chopped onions, oregano, seasoning salt and pepper.
  6. Add the egg mixture to the zucchini mixture and combine.
  7. Pour the mixture into your prepared baking dish.
  8. Bake 45 – 50 minutes, or until a toothpick inserted into the centre comes out clean.
