INGREDIENTS
- 4 eggs
- 2 cups shredded zucchini
- 1⁄2 cup oil
- 1 cup Bisquick
- 1 small onion, chopped or grated
- 8 ounces grated cheddar cheese or parmesan cheese
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon pepper
- 1 teaspoon oregano (optional)
Tip: Squeeze the water out of the zucchini before adding to the mixture
INSTRUCTIONS
- Preheat your oven to 350 degrees F.
- Grease a 13 x 9 inch baking pan, or a 9 inch round baking dish with butter. Set aside.
- In a mixing bowl whisk the eggs until they are smooth.
- Add the vegetable oil, Bisquick and parmesan cheese. Mix well.
- In a separate bowl combine the sliced zucchini, chopped onions, oregano, seasoning salt and pepper.
- Add the egg mixture to the zucchini mixture and combine.
- Pour the mixture into your prepared baking dish.
- Bake 45 – 50 minutes, or until a toothpick inserted into the centre comes out clean.
