INGREDIENTS
- 2-3 tablespoons butter
- 2 tablespoons flour
- 1 cup milk
- 2 eggs
- 2 cans of corn
- Salt and pepper to taste
INSTRUCTIONS
- Melt 2 to 3 tablespoons of butter and 2 heaping tablespoons of flour in a saucepan and stir for about 30 seconds. Add 1 cup of milk and stir until thickened.
- Drain 2 cans of corn
- Add drained corn to the thickened mixture and stir
- Let this mixture cool
- Beat 2 eggs in a separate bowl, then add to the cooled corn mixture and stir
- Sprinkle salt and pepper to taste
- Add to a greased 9 by 13 inch pan
- Bake 350 for 30 to 40 minutes
- You know it’s ready when a knife comes out clean from the center of the casserole!
