Adam’s Apple Pie

INGREDIENTS

  • Pie dough (enough for two crusts)
  • 6-8 Baking apples (around 4 1/2 lbs) peeled, cored, and cut into 1/4 inch slices
  • 3 Quarts boiling water
  • 1/4 cup sugar
  • 1/4 cup brown sugar (lightly packed)
  • 4 tbsp Corn starch
  • 1/4 tsp Cinnamon
  • 1/4 tsp Salt
  • 2 tbsp lemon juice
  • 1 Egg

INSTRUCTIONS

  1. Preheat oven to 400F (204C)
  2. Place sliced apples in a large bowl, pour boiling water over apples until just covered and let sit for 15 minutes.
  3. Drain apples in colander until dry then tranfer back into the bowl. Mix sugar, brown sugar, corn starch, cinnamon, and salt then add the dry mixture and lemon juice to the apple slices and mix gently until evenly coated.
  4. Roll one disk of dough into a 12 inch circle, transfer to a pie dish and add apple filling. roll the other circle of dough into another 12 inch disk. If you plan to make a lattice crust, slice the second 12 inch disk into 1 inch slices and weave them together ontop of the pie to create your lattice, otherwise simply place the second disk ontop of the pie dish. Trim your top and bottom crust until they overhang the edge of the pie dish by 1/2 inch, then tuck the crusts between the bottom crust and the pie plate. If not using a lattice crust, slice several ventilation slits in the top of the pie.
  5. Beat your egg lightly, then use a pastry brush to apply an even coating to the top crust.
  6. Bake the pie until it starts to brown (about 20 minutes) then reduce heat to 375F (190C) and continue baking until the pie becomes a deep golden brown (about 30 minutes). Remove pie from oven and allow to cool completely before serving.

Notes:

  1. Baking apples refers to granny smith, gold delicious, braeburn, and other similar apples that hold up well to the baking process, flavor and texture vary so some experimentation may be needed to find out your favorites.
  2. Should the crust brown too much for your liking you can use a pie shield during the initial 20 minutes of baking, then remove it after reducing the temperature. You can buy one if you make pies regularly, but it is easy to make one by cutting a half circle out of a folded piece of aluminum foil.
