INGREDIENTS
- 1/2 cup shortening
- 1 cup sugar
- 1 cup chocolate or white chocolate chips
- 2 cups flour
- 1 cup pumpkin
- 1 egg
- 1 tsp vanilla
- 1 scant tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
INSTRUCTIONS
- Combine all ingredients into a large bowl and mix well. This recipe can easily be mixed by hand but a mixer also works.
- Form into small balls, 2 inches apart on a baking sheet. It’s a sticky dough, so a cookie scoop works wonders for getting the size and shape of the cookies nice and neat!
- Bake at 375 for 10-12 minutes.
- Allow to cool and then store in an airtight container at room temp for 5-6 days.
- Ps. Add a dash of edible gold glitter (when cooled) if you’re feeling extra festive!
