Pumpkin Chocolate Chip Cookies

INGREDIENTS

  • 1/2 cup shortening
  • 1 cup sugar
  • 1 cup chocolate or white chocolate chips
  • 2 cups flour
  • 1 cup pumpkin
  • 1 egg 
  • 1 tsp vanilla
  • 1 scant tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon

INSTRUCTIONS

  1. Combine all ingredients into a large bowl and mix well. This recipe can easily be mixed by hand but a mixer also works.
  2. Form into small balls, 2 inches apart on a baking sheet. It’s a sticky dough, so a cookie scoop works wonders for getting the size and shape of the cookies nice and neat!
  3. Bake at 375 for 10-12 minutes.
  4. Allow to cool and then store in an airtight container at room temp for 5-6 days.
  5. Ps. Add a dash of edible gold glitter (when cooled) if you’re feeling extra festive!
